Mediterranean Chicken

Olives were at one time a wretched piece of fruit (or is it a vegetable?). I recall some friends making a chicken dish made of green olives and the taste of the olives almost made me reach for the nearest bucket. However, I guess as one's palate becomes more refined over the years, I seem to savour the taste of olives more and more. I especially relish the taste of black olives nowadays, and it seems that my 3 year old daughter has now followed in my footsteps. At times, we can nearly come to fisticuffs over the olives in a pizza pie.

Now that olives have become palatable, I made up this quickie of a mediterranean chicken dish. It's a simple, one pot dish that would take a scant 15 minutes of one's time. Healthy and full of vitamins.

Mediterranean Chicken

1. Roughly chop up a big tomato.
2. Dump tomato in a pot with 1/4 cup of water and 2 sliced up cloves of garlic.
3. Cover pot over medium flame and let simmer till the tomato breaks down.
4. Add in italian herbs and cubed chicken pieces. Season well with salt and pepper.
5. Add in chopped up olives and green beans. Cover pot and cook till the beans are tender yet crunchy.

Plate up and enjoy.
