My Retaliation Meal

With OtherHalf enjoying his nasi goreng and satay, you think I was happy to watch him eat whilst having cravings for satay?
Of course not! So, for my alternative, I rustled myself a chicken salad, satay style. Bearing in mind, I technically can't have satay sauce, but with all the hip hop I've been doing, I think I would be able to get away with a small cheat.
Chicken Salad, Satay Style
1. Defrost a deboned chicken thigh, and marinade with ground cumin, ground coriander, paprika, salt and pepper. Grill or pan fry dry and set aside.
2. Shred up some romaine salad leaves and julienne some japanese cucumber and carrots. Heap in a bowl.
3. For the salad dressing, take a tablespoon of satay sauce, add with a wee bit hot water, and toss your salad with the dressing.
4. Finish off with your chicken on top, serve and enjoy.
I must say that this is pretty munchilicious!
