Tomato Chicken

1. Defrost a chicken breast and season with oregano, salt and ground pepper.
2. Chop up a few cherry tomatoes coarsely.
2. Heat up a pan with a wee bit of virgin coconut oil and pan fry your tomatoes until softened.
4. Add in your chicken bits with a dash of water and cook through.
I served it with some parboiled green beans. Looks little, but to my surprise, I couldn’t even finish the whole lot.!
