Tender Stalks of Yumminess

To accompany the lemon chicken, I made a simple stir fry of asparagus and carrots.

Stir Fried Asparagus and Carrots

1. Trim your asparagus and carrots into even sized batons.
2. Pound a small handfull of dried anchovies, 1/2 an onion, 3 - 4 cloves of garlic and a deseeded red chilli in a lesung.
3. Heat some oil and saute the pounded ingredients till fragrant.
4. Throw in your vegetables, stir fry till tender yet still crunchy
5. Lightly season with salt.
6. Dish up and serve.
