Beefy Goodness

So, this weekend's iftar was a whole exercise in smoking out the kitchen. Throughtout the week, I was dying to get my hands dirty in making beef stew, and beef stew it was on Saturday night. I made enough leftovers to be frozen and turned into a casserole sometime throughout the week - just add mash on top, brown and serve.

Was still in IronMommyChef mode, so decided that the main dish for today was Thai inspired. Thus, my pick of the day was Beef Paprik!

Beef Paprik

1. Slice up a chunk of beef thinly and cook it up in some water with a chunk of ginger and salt thrown in for good measure. Let beef tenderise and set aside, reserving the cooking liquid as well.
2. Pound up some garlic, fresh chilli and red onion until fine.
3. Saute the pounded ingredients in oil till fragrant, then pour in the beef and stock.
4. Add in veg of choice - here I used cauliflower, celery, carrots and french beans. Also throw in a few kaffir lime leaves (I'm lucky to have it growing behind my house in my neighbour's pot!). Cook till veg are tender crunchy.
5. Add in seasoning and some oyster sauce. Stir fry well, dish up and serve with hot rice.

Hi Izreen, this looks fabulous! What did you marinate the beef with? Or cooking it with water with ginger and salt enough?
