Cake To Hit That Spot

Had been tweeting about trying to find a moist chocolate cake with peanut butter frosting, but as always, its either you can't find it or the price is too dear to fork out. Being an loyal shopper at Tesco, I chanced upon a moist chocolate cake recipe that was pretty easy to whip up in a jiffy in one of its promotional catalogues. With the oven already out, I might as well bake my cravings myself.

Moist Chocolate Cake with Peanut Butter Frosting

1. In a saucepan, mix together 1 cup cocoa powder, 1 cup of canned milk, 1 cup of oil, 1 cup of fine granulated sugar, 1/2 cup of sweetened condensed milk.
2. Heat the mixture until the sugars, cocoa and liquids are well combine. Set off the heat and let cool.
3. Beat 3 eggs in a mixing bowl till airy and frothy.
4. Mix in 1 1/4 cup flour and 1tsp each of baking powder and baking soda in slowly.
5. At this juncture, you can either choose to bake the cake mixture or to steam it (for about 1 hour if you use all the cake mix, 40 minutes if its in small container). I did half and half. Cool down throughly.
6. For the peanut butter frosting, whip together 1/4 stick butter and a couple of generous tablespoonsfull of chunky peanut butter. Gradually whip in icing sugar until the frosting stands in soft peaks. Spread over cake.

Cut a nice generous wedge of it and enjoy. The next time, I'm definitely turning these into cupcakes for ease of enjoyment.
